Red Thai Chicken Curry
In this post we show you how to cook a simple Red Thai Chicken Curry while out camping.
So full disclaimer at the start. We usually put up simple recipes, this one is easy but we cook rice. Some people might not like cooking rice while camping, see alternative below. Our Uni Flame cookset includes a rice cooker so cooking rice is super easy for us.
The Gear We Use
This is the gear we use when cooking a Red Thai Chicken Curry:
- Uni Flame large cookset – large or small saucepan and the rice cooker.
- Companion double gas burner in our Drifta trailer DOT373.
- Primus single stove gas burned when touring in 76 AUS.
- Chopping board and sharp knife.
Ingredients
- Red Thai curry paste
- Coconut milk
- Fish sauce
- Carrots
- Beans / Snow peas
- Sweet potato / pumpkin
- Olive oil
- Rice
- Chicken
- Sugar
Chop and change veggies, or use all of the above. Sweet potato, carrots and pumpkin are good ingredients as they are hard, easy to store and last a long time (onions as well but not needed for this recipe). Can be used in lots of other simple meals.
Mostly dry ingredients that don’t need to be stored in your fridge. Chicken is the only ingredient that needs to go in the fridge. As we have mentioned before, be prepared and sort out portion sizes before your trip. If meal requires meat chopped or diced do this before hand as well. Buy a vacuum sealer, seal and freeze. There are lots of affordable vacuum sealers available. We use a cheap Kings one and it works well enough.
Method
Heat up some oil in a saucepan or steel camp oven and then add at least half the jar and heat up. Stir constantly so it doesn’t stick and add a small amount of the coconut milk to help dissolve the paste. After a few minutes add the rest of the coconut milk and stir for another couple of minutes.
While this is happening chop up your chicken into slices if not already done. Now add to saucepan and stir briefly. Add the lid and let simmer for 10 minutes.
If having rice then start to cook your rice now. It’ll take 25 minutes or so to cook. If you don’t want to cook rice then check our alternative method further below.
While simmering chop up your chosen veggies. If you are using sweet potatoes you’ll need to cook for longer in the next step or add with chicken in previous step.
After 10 minutes or so, remove lid and stir. Now add veggies chopped before. Add a teaspoon or so of sugar. A tablespoon or so of fish sauce and stir.
Let simmer for another 10-15 minutes until veggies and rice are cooked.
Sauce should have thickened. You can also add cornflour earlier if you carry any to help thicken the sauce. As we have rice we aren’t too bothered if the sauce is not really thick as the rice soaks it all up.
Really simple meal with mainly dry and easy store ingredients. With things like fish sauce we always carry a small container of this as we use this in a couple of recipes. We do the same for soy and Worcestershire sauce as well.
Alternative without rice cooker
Have it without rice or try the below.
Replace the chicken with beef or lamb, something that cooks well over a bit more time. Chicken can dry out.
Can do in either a camp oven or a saucepan on gas. Increase the cook time in the above recipe from 10 minutes to 30 minutes. Then add your veggies and a cup or two of rice and stir. Let simmer for another 30-45 minutes and you’ll be good to go.
