Corned Beef Fried Rice
In this post we show you how to cook corned beef fried rice, made entirely from dry ingredients.
Another simple recipe that can be made by all dry and easy to store ingredients. We say ‘can be’ as you can use better alternatives if you have a freezer.
We think this is pretty tasty and no one else has complained but maybe there are just polite.
The Gear We Use
This is the gear we use when cooking this recipe:
- Uni Flame large cookset – large saucepan and rice cooker.
- Companion double gas burner in our Drifta trailer DOT373.
- Primus single stove gas burned when touring in 76 AUS.
- Chopping board and sharp knife.
Ingredients
- Can corned beef
- Rice
- Garlic
- Egg x 2
- Soy sauce
- Fish sauce
- Onion
- Olive oil
- Salt and pepper
- Chilly
- Canned or frozen peas
Frozen peas taste a lot better than canned beans but if you don’t have a freezer use canned they are good enough. We use both depending on which setup we are camping with. Touring in the Cruiser we will use canned. If in the trailer and we have the freezer going we will take frozen peas.
You can also see from the ingredients that most of these can be used in other meals. So fairly versatile ingredients.
Method
If you have a rice cooker or something to cook rice get your rice cooking first.
Now do your prep and chop up the onion, chilli and garlic. When the rice is half cooked, so you basically have 10-15 minutes to go then start this step. You can also wait until the rice is cooked as it doesn’t matter if it gets cold.
Fry up the onions, garlic and chilli in some olive oil for a few minutes. When the onion is starting to brown, throw in the can of corned beef. You will need to stir and prod the corned beef to get it to separate into smaller pieces. Continue to fry up on medium heat.
Now throw in the previously cooked rice and stir. Crack the two eggs and throw these in and stir. Now add a tablespoon or two of the fish sauce and a tablespoon or two of soy sauce. Finally add the canned peas after draining the liquid from the can first and stir. If you are using frozen peas then add these instead.
As mentioned at the start of this post frozen peas will taste a lot better but if you are touring and don’t have a freezer canned peas will do just fine.
Stir for a couple more minutes and serve immediately. You will be surprised at how good this tastes. For a meal that is tasty and can be made all from dry and easy to store ingredients this is a great and simple meal while touring. This is also another really good meal to have as a few backups in the event you get isolated somewhere or have issues with storing cold meat. We always have these ingredients to cook two of these meals in the event we have an issue but usually cook it at least once as it is not bad a all.
