Desert Chilli Recipe, the Protein Hit You Need
In this recipe story we share with you our simple but extra tasty desert chilli recipe. This is a protein hit that you need, the perfect camping meal that will get everyone excited.
The opening paragraph is not a lie, this meal is delicious and will be a hit with everyone at camp. I originally called this spicy mince, I know, it is rather boring. After I cooked this for our travelling party when we crossed the Simpson Desert along the Madigan Line, I was told this meal needed a better name. As a result, we aptly named it desert chilli.

Gear We Use to Cook Desert Chilli
This is the gear we use to cook our desert chili recipe.
- Camp Chef Pro 30 14-inch gas cooker.
- Camp Chef griddle or hot plate.
- Zebra Pro stainless steel knife with leather Drifta cover.
- Chopping board.
- Large spatula and tongs.
The Camp Chef Pro 30 gas cooker with the large griddle (or hot plate), is the perfect bit of gear for cooking this recipe. Having a nice big hot plate to cook this all on makes it that much easier. If you do not have a hot plate, then you will need to use a large frying pan or skillet and something else to keep the chilli hot while you fry up the eggs.
Servings
The below ingredients will serve six people comfortably. Adjust the quantity of ingredients based on the number of people. To be perfectly honest, this recipe is rather flexible, so you can chop and change ingredients and portion sizes to your liking.
Serves – 6 people
Desert Chilli Ingredients
- 750 grams x premium beef mince
- 4-6 x rashers of bacon chopped
- 2 x garlic gloves chopped
- 2 x brown onions chopped
- 1 x can of Heinz chilli beans
- 2 x tablespoons of tomato paste
- 2-3 x teaspoons of Mexican spice mix or sachet of Taco spice mix
- Olive oil
- 6 x eggs
We carry a Mexican spice mix with us that you can pick up in the spices isle at any of your grocery stores. This is a good spice to carry as you can use it in rubs and other marinades, so it is a useful spice to have in your setup. If you cannot find this spice mix, simply grab a sachet of one of the taco spice mixes, this will work fine.
Cooking Our Simple Desert Chilli
Start off by chopping all your ingredients. This does not need to be precise, so do this however you please. We chop the onions, garlic, and bacon before we start cooking, all your prep is now done.
Heat up some olive oil on whatever you are using to cook this recipe. As we are using the Camp Chef Pro 30 gas cooker with griddle, we start by frying up the onions, garlic, and bacon all at the same time. If you are using something smaller, start with the onions, then add the garlic, and bacon.
Once the onions are nice and soft and the bacon looks good, throw the mince on, and start to cook. Mix all the ingredients together while it is all cooking. When the mince is almost cooked, approximately 5 minutes, add the can of chilli beans and a few squeezes of tomato paste. Now mix all these ingredients together for a couple of minutes. The beef mince should now be cooked. If you are using a frying pan or skillet, set the chilli mix to the side and keep warm.
Add a little more olive oil and heat up. Now crack the six eggs and fry. Do not flip the fried eggs as you want the yolk to be nice and runny. Fry the eggs for approximately five minutes until the egg whites are cooked and the yolk has sealed. Season the fried eggs with salt and pepper. You are now ready to serve.
Dish up the desert chilli on to six plates and then top off each with a fried egg. The runny egg yolk becomes your sauce topping to the desert chilli. This is ridiculously tasty, a massive protein hit, and it does provide an excellent ending to a good day of exploring.
