Bush Sausage Rolls – Camp Cooking Made Easy

Give this easy bush sausage rolls recipe a go on your next camping trip. It’s versatile, delicious, and perfect for cooking over the fire.
The Concept
This recipe combines pork sausages with a damper-style bread mix. You can easily customise it by adding herbs, spices, cheese, or using different types of sausages. We’ve also included a simple dessert idea to round off your bush meal.
Ingredients (Makes 2 Bush Sausage Rolls)
The below ingredients make two bush sausage rolls. For more bush sausage rolls just increase the ingredients.
- 4 x Pork Sausages
- 1 x Onion
- 1 x Garlic Glove
- 1 x Cup of Self Raising Flour
- 1 x Teaspoon of Sugar
- 1 x Tablespoon of Butter
- Splash of Milk
- Pinch of Salt
- Tomato Sauce for Serving
Method
To start, slice the onion and finely chop the garlic glove. In a frypan, heat some oil and cook the onion and garlic until soft. Fry the sausages until cooked through, then set aside to cool.
Now make the damper bread mix. In a bowl, add the self-raising flour, sugar and salt. Mix the dry ingredients using a butter knife or something similar. Then add the butter to the dry mix and combine the butter and flour with your hands. Continue working the flour and butter until you are left with a fine breadcrumb style mix.
Then make a small well in the centre of the mix and add a splash of milk, approximately one to two tablespoons. Now mix the ingredients with the butter knife. Add more milk if required. Start with a little milk and slowly add more. You want a consistent mix that is slightly sticky not too dry. If you add too much milk, then just add a little more flour until you get the right consistency.
On a cutting board or clean flat surface, dust a little flour. Divide the damper bread mix into two equal portions using the knife. Now on the floured surface, using your fingers, flatten the damper dough into something that looks like a small pizza base or pita bread.
Now take the fried onion and garlic and place equal amounts on each flat damper. Then cut the pork sausages down the middle, this is to keep them in place when the bush sausage rolls are rolled. Place the sausages on top of the fried onion and garlic, as you can see in the pictures below.
To finish off the bush sausage rolls, fold the sides of the flat damper over the sausages and push together. The dough mix should stick together, you may need to pinch the joins. Make sure that no onion or sausage is exposed.
Then cook the bush sausage rolls over a grill. You can cook them over charcoal or a gas BBQ, either option will work. You could also cook these in a camp oven if you prefer. After four to five minutes, turn the bush sausage rolls over and cook the opposite side. You may need to cook further on each side until the damper is cooked. The bush sausage rolls will be cooked when the damper has a nice golden crust and has a hollow sound when tapping.
Serve with tomato sauce and eat around the fire with your hands.
Other variations include adding extras like herbs and spices, cheese, and different types of sausages. You can also make different types of desserts like the one below.
Finish off with a Simple Dessert - Nutella Fire Bread
A great addition to this bush sausage rolls recipe is to add this simple dessert that everyone will enjoy.
When making the damper mix in the steps above, increase the ingredients by 50% (i.e. another ½ cup of flour etc). When separating the damper dough mix, keep a little extra aside to make this dessert. You don’t want these to be as large as the bush sausage rolls recipe, no more than half the size.
On the flat damper dough, place two to three tablespoons of Nutella in the middle of the dough. Then fold the sides of the flat damper over the Nutella and seal all the joins so Nutella is visible.
Cook the Nutella Fire Bread over the grill in the same way as you cooked the bush sausage rolls. Once cooked, enjoy them around the fire.
